I'm currently dating a 35y/o man, and I'm 18.. (lost my virginity to him)
I really have no problem with him, he cares about me, he's responsible, hard-working, athletic, succesful..  but he's asking for too much sex.. to the point where it can get a little annoying.

I don't know if I should end it just because of that

Well, if there are no other problems in the relationship, and he really cares about you, there shouldn't be a problem with you talking to him about it. Communication is really vital in relationships, and it's something you'll have to learn how to do in this relationship and any future relationship you may have. Talk to him about it, explain that you don't want to have sex as much as he does and just talk about your feelings concerning this issue. Hopefully he'll talk back, explain his feelings and the both of you can come to a good conclusion about this.

I don't think you should go rushing in and end things just yet - not if you both care about eachother a great deal, and not before you've taken the chance to talk to him about it.

Other than that, if he chooses not to respect what you need and want and if he continues to demand things from you that you just don't want, well, then maybe it'd be time to reassess the relationship.
