I'd suggest learning how to control your own emotions (or at least being able to prevent your emotions being so easily swayed by your girlfriend - same thing in this case), or at the very least, learning how to control yourself when her anger reflects on you. Your girlfriend's moods aren't going to be changing any time soon and this type of thing will never go away, so you'll have to figure it out somehow.
